The lentil has become one of my favorite foods, today I did something rather nice with them
Red lentils with Spinich
1/2 a small onion diced,
1/2 cup red lentils
Splash Garlic Oil
Chunk of Frozen Spinich
Seeded Mustard, Pesto and Sun dried Tomatos
3/4 cup water
Some rice mix
Microwave the oil (COVERED!) for 20s
add the onion microwave for about 2:00
Add everything else, stir well.
Microwave for about 6:00 uncovered
Stir well, cover for 3-4 more minutes
I like to microwave everything on a paper towel to catch any mess that may happen
